It's Artistic Swimming's first #FuelMyFriday feature of the year, as Daniella Lloyd introduces her favourite Pork Ragu with Spaghetti to boost her training...
Having recently been announced as part of the duet squad on British Artistic Swimming's 2022-23 programme, Daniella knows that some tough training sessions are ahead, and that fuelling these sessions correctly will be key to making progress. The City of Bristol Aquatics Artistic Swimming athlete told us she loves to have her favourite meal just before a training camp gets underway, providing the right balance between filling and fuel for the next day's sessions. Will you be giving it a try?
Ingredients:
Serves 2
- 250g pork mince
- 1 garlic clove, peeled and chopped
- 2 rashers of bacon, chopped
- 1 medium carrot, peeled and diced
- 1 brown onion, peeled and diced
- 200g tinned tomatoes
- 1/2 courgette, diced
- 2 tbsp tomato purée
- 4-6 sundried tomatoes, chopped
- 200g spaghetti
- Grated parmesan, to serve
Method:
- Add the pork mince, bacon, garlic and onion to an oiled pan over a medium heat and cook for 6-8 minutes or until browned.
- Add the carrot and courgette and continue to cook for a further 2 minutes.
- Pour in chopped tomatoes, tomato purée and sundried tomatoes, bring to the boil and simmer for 20 minutes.
- In the meantime, cook the spaghetti as per packet instructions, drain and split across 2 plates.
- Top spaghetti with the ragu and garnish with parmesan.
