Another strong dish to fuel your training on this week's #FuelMyFriday. Medi Harris presents a mouth-watering chorizo and mozzarella stuffed chicken breast, served with pesto pasta and tenderstem broccoli, that has become a key part of her nutrition. Will you be giving it a go?
Winning five medals across three major competitions in 2022 can't be easy, but European champion Medi Harris makes sure to fuel her sessions effectively whilst also maintaining enjoyment in her nutrition. With the British Swimming Championships coming up next week, that will certainly still be the case...
Serves 2
Ingredients:
- 2-3 chicken breasts
- 2-3 chorizo slices per chicken breast
- 1 mozzarella ball, sliced
- 150g pasta
- 100g pesto
- 150g tenderstem broccoli
- Garlic powder
- Paprika
- Mixed herbs
- Salt and pepper
Method:
- Make a cut using a sharp knife along one side of each chicken breast and open them up, placing inside 2-3 slices of chorizo, and evenly divide the mozzarella slices and place with the chorizo.
- Season your chicken breasts well with garlic powder, paprika, mixed herbs, salt and pepper.
- Place in the oven for 25-30 minutes at 200 degrees until cooked through and the mozzarella has melted.
- Meanwhile, cook your pasta as per packet instructions to your liking, once done, mix through the pesto.
- Tenderstem broccoli can be boiled, steamed or fried, for 4-5 minutes, as per your preference.
- Serve all at once, with the chicken on top of a bed of pesto pasta, with tenderstem broccoli on the side - Medi's favourite!
