Fresh from the Para-Swimming Winter National Meet in Glasgow last weekend, Toni Shaw talked us through how she fuels her races with her Spaghetti Bolognese recipe. Take a look below to fuel your preparation like a World Champion, and power through competitions...
Toni endured a solid weekend of performances at Tollcross in its short-course format, and the versatile athlete told us how her favourite pre-race meal is a staple part of her event preparation, providing the energy to perform at her best in competition.
Ingredients:
- 2 tbsp Olive Oil
- 200g Spaghetti or Pasta
- 200g Beef Mince
- 1/2 Onion
- 1 Garlic Clove
- 50g Carrot
- 1 tin Chopped Tomatoes
- 200ml Beef Stock
Method:
- Add olive oil and mince to a pan over a medium heat, brown all over and set aside.
- Dice your onion and fry until softened, add chopped garlic and grated carrot, fry for 2 mins and re-add your mince.
- Add a tin of chopped tomatoes and stir to combine, add stock and reduce heat, simmer for approximately 45 minutes, add salt and pepper to taste.
- Cook spaghetti as per packet instructions.
- Combine and serve as desired.
